How the gingerbread house works

Your real house

The outline comes from OpenStreetMap, with its storeys, height and roof shape where they are mapped. It is simplified to a box the dough can build: the main block, plus one wing for an L- or T-shaped house. Set the roof or storeys yourself if the map has them wrong.

Made to fit together

The long walls run the full length and the end walls fit between them, so the dough's own thickness is in every corner. The roof's underside sits on the outer top edge of the walls, the gables rise to meet it, and a wing's roof runs into the main roof at a valley.

Cutters and templates

Each piece gets a cutter with a thin, tapered blade and a wide grip rim, and identical pieces share one. Windows, round attic windows and the door have their own small cutters. Every piece is also a full-size paper template in the PDF, for cutting with a knife.

Bake and build

Roll the dough between the rolling guides, cut, bake and trim it against the templates while it is warm. The guide takes you through the order: walls first, a night to dry, then the roof, the chimney and the snow.
